I have experienced vegetarianism two years ago. It really helped to discover a new way to cook and to put into practice my real "political" beliefs. After experiencing health problems due to an unbalanced diet, I have now found a perfect balance by drinking milk and eating cheese.

What do you think about being a Veg?

My English is not very good! but I would like telling you I'm ok with you,I am also vegetarian but I usually eat cheese and milk.I never eat fish and meat but I like eating peanuts,hazelnuts,walnuts...chocolate

thnaks Claire1. I must admit that I eat meat each weekend because It is very difficult to live with people who are "Meat eaters", they tend to disagree with us and to find that completely absurd .

But most of the time, being a Veg is cool and one can have a lot of fun in trying to cook differently, to discover new flavours

I don't care what peope say about my vegetarism...My family knows that,so my mother specially cooks for me ,for example on Christmas,she is happy because she has dicovered many new recipes !!! my niece Sophie is an other disciple ,a new member !! her mother doesn't like but...she has to accept!!!
I'd would like telling more things about this subjet,but my English is not so fluently....the vegetarism,for me it's a way of life..do you undesrtand me?

After a quick talk with Claire 1, I put a bit of Vegetarianism in that world of "meat eaters"

Spinach Crumb:

Peel an onion and a piece of schalot. Put some olive oil in a pan (a thick one) and put it on low heat. Once it has melted, throw the onion and the schalot and cook them slowly til they get stewed. ADD your spinach (150 grs per person) , frozen one are much convenient because they loose little water. then add a bit of mixed garlic. Put some salt and pepper. Let it cook during 10 minutes. Turn the heat off and add about a glass of single cream. Add curry and paprika. Put the oven on ( grill) and put the Spinach in a bowl ( that can be used in an oven) and cover with grasted cheese ( but no cheddar for Heaven's sake). Put it in the oven til it gets brown.

Cook some Pene regate, once they are cooked, add some parsley and a few drops of olive oil. Serve those Pasta with your Spinachs and thos garlic toasts . A good white wine can be a useful friend!!

just a quick receipe:

Cook some pasta, while they are cooking take avoccadoes and cut them in small cubes (take ripe avoccadoes). put your pasta in a sift and throw the cubes in the pan, heat off , add single cream, some parmesan and a bit of nutmeg,salt and pepper. Let the avoccadoes heating up slowly,. Put your pasta in a plate, add a few drops of olive oil and add the sauce made with avoccadoes.

A balanced and tasteful reciepe

I post a Spanig veg recipe,but I have to say it's cold soup,ideal for summer....we can dream in next summer so! (sorry for my mistakes)

GAZAPACHO
Ingredients for 6 persons

-1,5 kg ripe tomatoes
-1 cucumber
-green pepper
-1 small cup of olive oil
-a little teaspoon of vinegar
-salt
-2 garlics cloves
-stale bread soaked in water

Peel and de-seed the tomatoes.Chop and put in a food processor with the peeled cucumber,deseeded peeper chopped garlic and soaked bread.Add the olive oil,a little salt and a teaspoon of vinegar.Blend well and then sieve the mixture to eliminate any remaining lumps.Finally add a little cold water to thin as desired.

I like a lot the " gazpacho" when it is cold...not now!! of course

I like a lot this veg Mexican recipe,it is easy to cook....

FREID AVOCADO

INGREDIENTS

2 Cups of flour
2 eggs
1 can beer
.-salt and pepper to taste
-3 avocados,slightly firm
-oil for frying

Combine dry ingredients and gradually stir in beer until consistency of light pancake batter,not too thick....
Peel and cut avocados into 8 wedges...
Heat oil to 350º.Dip avocado wedge into batter;drop into hot oil and fry until golden brown.
Do not over-crowd when frying!!!!!

serve with tomatoe salsa and drink beer...
we can eat that in winter,in summer ...with good friends in a party !!!

enjoy that meal !!!!

I'll try to cook the fried avocados... sounds great!
Webmaster, you should create a new item with these recipes. There's one to translate the songs, why not one to write the recipes in English?

Hello everyone.
I read your thread and want to add a piece of advice.
Many years ago I was a vegetarian.
Not only was I a vegetarian but every week I went without food 24 or 36 hours long.
I'm no more vegetarian now, but it is not really a choice.
I've read a lot of books and magazines since and i've changed a bit my point of view.
A lot of vegetarianists choose this way of life because they are concerned with their health. Or they don't want to kill life.
The both points of view, that I respect, aren't good to my eyes.
Some other choose to be vegetarian because of ecological reason. Seems better to me.
About health a good diet is the best way to keep illness far from oneself.
Last you must know that meat is very long to be digested.
So if you eat meat, it's better to stay a day (24h) without food.
Of course you must drink a lot and only water to clean up your body.

I'm not a specialist too, and I respect greatly your choice.
But the question of respecting the animals seems to me a false debate.
First why respecting animals and not life as a whole ?
That would mean that we couldn't eat vegetables no more ?
Or does vegetal life worth less respect than animal one.
Second, If we want to respect animal life and I fully agree with you on that matter, we have to change many many things in our behaviours, not only our way of feeding ourselves.
Do you know that cars, for instance, kills everyday plenty of animals. Insects first, but also turtles, snakes, frogs, "herissons" and many more.
And what about the pollution and the heating of the planet ?
If you are aware of all of those aspects and if you had changed your behaviour to really respect animals in every part of your life, then I apologize and congratulate you.
If not, I will suggest you another reason to be vegetarian, from my point of view and in my humble opinion of course.
Do you know that a cow cost much more energy (IE Oil > CO2) and space to breed, to kill, to transport, etc, than its vegetal equivalent (Soya, wheat, rice,)
That means that for the forsake of the planet, not only the animals, each of us would have to eat less meat (or no more meat) and more vegetables.
But, once again, it's only (a part of) my point of view as I play a little the Devil here.

It's difficult for me to write fluently in English ,,,I'm a convinced veg,,,,I' dont' care what the people say about that.I respect all the people,,,,,, I don't like meat and fish ,,,,, sometimes I eat eggs,milk and cheese,,I have a good diet...I am sure!!!!
I am vegetarian when I was very young ...I like it,it's for another way of life for me ,it's very important.

thanks Selgan, it is not so much to change the planet than having an ethic , I tend to feel concerned about my environment. I don't use plastic bags, no car (and no driving license either), use natural soap and sort out my trashes. I used tohave a bio garden (i live in a flat now), just little things that can help. I can't stand seeing blood . Of course, I must admit I like the very taste of meat (sorry Claire1) like turkey but I can't stand eating beef .

It is just a way of being, not a will to impose my choice to everybody and When I am invited for dinner, I do eat meat by respect for my friends.

that's it being a responsible Veg!!

very easy and very delicious !unfortunately quite fattening !!!!!
I'm sure you know it

GUAGAMOLE It is a mexican recipe.

Ingredients

-2 ripe avocados
-1 small oinion,minced
-1/2 tomato finely chopped
-1 teaspoon lemon juice or lime juice (optional)
-salt

-
1:Cut the avocados in half ,remove the pit,scop out the flesh
and mash or chop.

2:Stir in the other ingredients and add salt to taste

3: Store in a covered container in the refrigerator

To keep "guacamole" and avocados,the best thing you can do is store them with the pits
.

yeah, We have mentioned that. I think the biggest advantage of being a veg is that we learn to cook differently to use new spices, to discover new flavours and It leads to be fed up with everyday food, fed up of tasteless meals and also open up to new ways of cooking. I'll soon be an amateur of spanish cuisine

another veg recipe,I like a lot,it's very easy and very delicious,it comes from Greece

EGGPLANT CAVIAR :a lovely ,thick eggplant dip.Great with crakers,French bread,pita bread or crudités.
4 servings
Time:90 minutes
Tools:
baking dish
knife
large spoon
food processor (optional)
large frying pan
wooden spoon

Ingredients
-1 large eggpalnt
-2 tablespoon olive oil
-1 large onion ,minced
-3 gloves garlic minced
-1 tablespoon tomato paste
-salt
-pepper

Preheat oven to 400.Bake eggplant in baking dish for about an hour.Set aside to cool,cut in half, scoop out filling,and chop or food process until it looks like oatmeal.
Meanwhile ,heat oil over medium heat,add onions,and sauté,stirring frequently,until translucent and very soft,about 10 minutes.Add garlic and sauté for one minute ,add tomato paste and cook one minute more.
Stir in eggplant and cook until thickened.Season with salt and pepper and serve.
You might like to garnish it with a drizzle of olive oil and some parley!

you can drinK "rosé" wine!!!

I'm a little suprised because you don't seem to add any substite of meat as for exemple tofu ( it's the steak of the vegetarien) in your alimentation.
The reason why you decide to be a vegetarian or vegetalian is not important. You do what you think is good for you. But please, don't forget to have a balanced alimentation to avoid a defeciency in vitamins.
An other example : mushrooms have the same nutritive value as a steak.

When I was a teeneger, the person who want to be vegetarien met difficulties to find "vegetarien food". Nowadays, we can find "vegetarien meat" near meat in the departments of the supermarket in Belgium.
For the people who are curious, I advice to buy "vegetarian meats" only to taste them. If you buy "vegetarian " mince and you make meatballs whith it and you don't say that the meatballs are vegetarian to avoid the apprehension, you could be surprise by the success of your vegetarien meal.
I don't advise you to do the same with the tofu because the colour and the texture are too different with the meat...than, it's difficult to avoid the apprehension.

To Claire 1
I'm happy to read that you insert foods as tofu or mushrooms in your alimentation because it's really important to keep a balanced alimentation even if you don't like meat.

hello,

I am vegetarian since the age of 5. I always lived this way, and never had any problems due to my eating habits.
-i am living in the south of france, where the culinary traditions are rather (or should I say totally) focussed on meat and culinary "delights" like "foie gras" and so on.

As I am going to Germany from time to time, I have experienced the difference between the mentalities of people in different countries and regions... I don't want to criticize my own region, but it's true that in some places, people are not really befriended with the idea of veg diet... indeed, in northern countries like holland and germany, veg. restaurants are quite well established and more popular than in France.

I sometimes argued with my science teachers who liked to convey the idea that vegetarian people were pale-faced, weak and so on...
I am 18 years old, I play basketball in a club 3 times a week, I am going to a fitness center, and I am passing a swimming exam for my highschool grade...i don't think that I am really tired

@babyscott: be aware of the difference between vegetarian and vegan: the vegetarian only renounces to meat, while the vegan doesn't eat any food stemming from animals (milk, eggs...)

for you .another veg recipe before Christmas...

it's called in Spanish "PORRUSALDA" It comes from Basque Contry,it's a very traditonal basque recipe,it's very easy to cook..

ingredients:
-8 medium potatoes
-8 thick leeks
-1 kilo pumpkin (carrots are also good)
-olive oil
-salt

-wash the leeks and cut them in bits
-Weat water in a pot ant put the leeks in it when it starts to boil.
-Let it boil slowly for 10 minutes an ttehen add the chopped pumpkin (Or carrots) and the potatoes,peeled and cracked in bits (star cuttint them with a knife ans before finishing the cut crack them.
-It makes the broth denser
-Let it boil slowly for 10 minutes ,salt it and pour virgin olive oil on it.
cook all for 10.15 minuetes and serve it hot

it's very light...and for me it's delicious
good appetit!

I'm vegetarian for 12 years and vegan (no meat/fish/egg/milk/ leather...) for 9 years. I'm vegan by ethic and I think it's very important to stop to eat meat. Animals aren't things, they are sensible individuals.

HUMMM, how delicious all theese vegetarian receipes. I didn't expect to find them on this website. I looks so serious by certain aspect I have to say !! I'm steel very new and have lot to discover.
I should bring you some of my vegetarian receipes. Such a good idea talking about healthy food. Did you know that we should eat everyday at each meal every COLOUR of food ? Example : carrot for the orange, salade for the green., tomatoes for the red, potatoes for the white or yellow, or egg , that would make your meal well balanced.
